- Heat a skillet or griddle over medium-high heat.
- Pinch off a small handful of ground beef and press it directly onto one half of each tortilla. Season well with salt, pepper, and garlic powder.
- Cook beef side down for 2–3 minutes until browned, while edges of the tortilla show tiny bubbles.
- Flip the tortilla so the browned burger faces up. Immediately sprinkle cheese over the beef and fold the tortilla in half.
- Grill both sides until crispy and melty, about 1–2 minutes per side.
- Slice into wedges and serve with pickles, diced onions, and burger sauce on the side.
Notes
One time-saving trick: Press and season all four tortilla patties at once, then cook two at a time. To avoid sogginess, crisp in a dry pan for 30–60 seconds on each side.
