Preparation
- Preheat your oven to 180°C/160°C Fan/375°F and line two to four baking trays with parchment paper.
- In a mixing bowl, cream together the unsalted butter, light brown sugar, and white granulated sugar until the mixture is light and fluffy.
- Beat in the medium egg and vanilla extract until fully combined.
- Gradually add the cocoa powder, plain flour, bicarbonate of soda, baking powder, and salt, mixing until a thick dough forms.
- Gently fold in all three types of chocolate chips—white, milk, and dark—ensuring they are evenly distributed throughout the dough.
- Using a spoon or cookie scoop, place dollops of the dough onto the prepared baking trays, making sure to space them apart.
Baking
- Bake in the preheated oven for 10–12 minutes, until the tops are crinkly. Keep an eye on them to make sure they don't over-bake!
- If the cookies have dome shapes when done, gently tap the trays on the counter to flatten them slightly.
- Allow the cookies to cool on the trays before serving. For an extra treat, pair them with a scoop of ice cream!
